Strawberry Freezer Jam

In the middle of winter when the snow is flying and the wind is cold you'll love opening a little jar of June memories for your morning toast.

Strawberry Freezer jam is easy, inexpensive and delicious.
Close to where I live there are farms where you can pick your own Strawberries. This year they were $1.69 per pound. It took me about 20 minutes to pick about 6 lbs of these sweet little beauties! Strawberries at this farm were grown in little mounds covered in straw.

It was very easy to spot them for picking and sampling. Talk about red handed!!

After picking your strawberries you'll need to get a few ingredients.

Local supermarkets usually carry all the supplies to make Strawberry Freezer Jam.

First you'll need plastic freezer jars. They come in different sizes. I usually use the smaller size. 6 to a package. They are by Ball. The same company that makes the glass canning jars. Wash the little jars and the lids and dry them thoroughly.

Ingredients:

4 Cups Crushed Strawberries
1 1/2 Cups Sugar
1 pkg of No Cook Fruit Pectin




Wash and hull about 4 lbs of fresh ripe strawberries.
(If you have a strawberry 'huller' it will make your job a little easier).

Chop the strawberries coarsely using a food processor or other chopping device.



Measure 4 C of the chopped strawberries. Set aside.











In a separate bowl combine the 'No Cook Fruit Pectin' and 1 1/2C sugar.


Pour sugar pectin mixture into bowl of chopped strawberries.

Mix thoroughly stirring for 3 full minutes.

Ladle strawberry jam up to fill line on jars. Cover and let jell for 1/2 hour.


Store in freezer for up to one year!
